No Egg Peach Cake

Because our peach tree is abundantly giving us fruits this year, I cannot help but experiment with recipes; usually substituting peaches instead of using apples or nectarines or even currants and other berries.

This recipe is an almost flop, because the recipe needed eggs; which I forgot to add! It was only after I shoved the cake in the oven that I checked the recipe again, by then, it's too late!

Hoping that the cake without eggs would be a success with chocolates, I topped them with melted chocos (without even tasting it!). Well, it didn't end up in the bin! It was chewy and surprisingly delicious! The girls love it topped with fresh peaches and whipped cream!

No Egg Peach Cake with Choco Stripes
Ingredients for the No Egg Peach Cake:



6 pcs peaches (washed and cut in cubes)
200 g soft butter (or margarine)
1/2 tsp vanilla extract
300 g sugar
a pinch of salt
275 g all-purpose flour
10 g baking powder
5 tbsp maracuja liquor (or egg liquor)
Some chocolate morsels

Preparation:
1. Combine butter, vanilla extract, sugar and salt until creamy. Add flour and baking powder into the mixture, then add the liquor. Mix thoroughly.
2. Pour the dough into a greased baking form, then spread the peaches.
3. Bake in a pre-heated oven at 175 degrees for 50 to 55 minutes.
4. Let cool before melting the chocolate morsels in the microwave and creating your choco stripes over the pre-cooled cake.

Buti namn masarap din sya kahit walang egg. Meron din ako dating bineyk nalimutan ko lagyan ng egg pero disster talaga. Di kasi masarap. hahaha!
