Spaghetti Carbonara Cupcakes

What do you do if you have left-over spaghetti noodles? In our family, we would have egg noodles the next day. That means, spaghetti noodles with fried eggs. The girls said it tastes better with loads of ketchup. Or else, the left-over spaghetti noodles would go straight into the freezer.

Yesterday, I checked the fridge and saw the left-over spaghetti. Then I remembered browsing a cookbook and seeing these cupcake-shaped noodles. Bingo!

Here's the easy-to-make Spaghetti Carbonara Cupcakes...

Spaghetti Carbonara Cupcakes with Salad and Ketchup



Ingredients:

400 - 500 grams cooked spaghetti noodles
200 grams carbonara sauce
4 eggs
1 1/2 cup grated cheese
salt and pepper to taste
some oil to grease the pan

Preparations:

1. In a big bowl, beat the eggs and add 1 cup grated cheese. Mix.
2. In another bowl, mix the spaghetti and carbonara.
3. Mix the egg mixture and spaghetti mixture thoroughly.
3. Scoop the mixture in a greased muffin pan. Sprinkle with grated cheese.
4. In a preheated oven, bake for 15-20 minutes at 175 degrees C.

Serve with salad or bread.

The girls preferred their Spaghetti Carbonara Cupcake with ketchup.
