Time for Lamb's Lettuce or Corn Salad

Freshly-picked Feldsalat (Lamb's Lettuce or Corn Salad) and cocktail tomatoes 

These past weeks, I have been serving rucola (arugula) salad at meal times. Last week, I discovered our Feldsalat (Lamb's Lettuce or Corn Salad) corner is thriving.

My husband decided to keep the snails from invading the lamb's lettuce corner by placing a plastic wall. It was effective and I could see that we would be harvesting a load of lamb's lettuce this year. Good thing because it is the girls' favorite salad!

I am also glad that we could still harvest tomatoes from our backyard garden. Greens and reds for a great side dish, yes!



Simple Lamb's Lettuce / Corn Salad recipe
Ingredients for a simple Lamb's Lettuce / Corn Salad and Tomatoes
- a handful of lamb's lettuce / corn salad
- 6-8 pcs. cocktail tomatoes (cut in half)
- a piece of toasted wheat bread
- 2-3 tsp of olive oil
- 1-2 tsp of balsamico vinegar
- salt and pepper to taste

Preparation:
Wash the lamb's lettuce / corn salad thoroughly. Don't forget to remove the roots. Place in a big salad bowl.
Add the chopped tomatoes. Break the toasted wheat bread into bite pieces and add in the bowl. Pour the olive oil and vinegar, season with salt and pepper to taste. Toss.

You could also add nuts!
